How to cook a haggis

Another Burns Night is upon us and an awful lot of haggis has left the store this weekend. Many customers have asked us the same question: "how do you cook a haggis?"

The simple answer is: "you don't have to cook it at all; the butcher has already done that for you".

I am tempted to tell people: "Spend a hundred and fifty thousand dollars and the Government of Ontario will issue a licence to you and tell you exactly how they want you to cook it". That story has been playing on Blighty's other blog (http://blog.blightys.com). Click on the link if you are interested in why haggis may disappear in Ontario before the next Burns Night.

Anyway, it is true, haggis is a cooked meat product; you only need to make it hot. There are two ways to do this.

  1. Make sure the haggis is thoroughly defrosted, then wrap it in aluminum foil. Place the haggis in an oven at 365 degF for about an hour
  2. Simmer the foil wrapped haggis in a large pan of water for about 2 hours per kilo.

Have a great Burns Supper and don't forget the "neeps" and "tatties" (rutabaga and potatoes).
