Banana Bread Pudding

The local supermarket had a great deal on bananas that, while still edible, had an awful lot of grey hair. I needed to use them quickly but I didn't have a lot of time to spare for cooking anything. Then I remembered I also had a loaf of white bread in the fridge. One of my favourite desserts is bread pudding, a dish that is usually made with raisins, "but why not substitute bananas?" I thought. to myself. Here is what I came up with.
Ingredients
  • 1 loaf of white bread (stale bread is actually better than fresh bread)
  • 1 bunch of bananas (even old, grey-haired bananas)
  • Vanilla Essence
  • Sugar

Preparation
  • Tear the bread into small pieces in a large bowl and mix in just enough water to make a mushy mess out of the bread
  • Leave the mushy bread to drain then squeeze and discard any excess water
  • Mix in half a cup of sugar and a tablespoon of vanilla essence
  • Chop the bananas and stir into the mix
  • Bake in an open tray at 375F for about an hour (until the top of the pudding looks leathery)
  • Allow to cool and eat it cold as a snack or warmed with custard

John's Notes
I spent about 10 minutes preparing this dish and then an hour later I was eating it with custard. I had substituted artificial sweetener for the sugar (I am a diabetic) but there is so much natural sugar in the bananas that my blood glucose readings were still stratospheric the next morning. If you share my condition or you are on a diet this tasty dessert should be eaten in small portions.
