The simple answer is: "you don't have to cook it at all; the butcher has already done that for you".
I am tempted to tell people: "Spend a hundred and fifty thousand dollars and the Government of Ontario will issue a licence to you and tell you exactly how they want you to cook it". That story has been playing on Blighty's other blog (http://blog.blightys.com). Click on the link if you are interested in why haggis may disappear in Ontario before the next Burns Night.
Anyway, it is true, haggis is a cooked meat product; you only need to make it hot. There are two ways to do this.
- Make sure the haggis is thoroughly defrosted, then wrap it in aluminum foil. Place the haggis in an oven at 365 degF for about an hour
- Simmer the foil wrapped haggis in a large pan of water for about 2 hours per kilo.
Have a great Burns Supper and don't forget the "neeps" and "tatties" (rutabaga and potatoes).
