Anglesey Eggs

This recipe makes a really tasty meal that is a "welcome home" treat on a cold evening. It is very easy to make and the ingredients are very inexpensive. Here is how I made mine.

Ingredients
  • Mashed potatoes
  • 2 stems of leeks
  • 4 Eggs
  • Grated cheddar cheese
  • Seasonings (salt, pepper, mustard)
  • Milk
  • Butter

Preparation
  • Dice and steam the leeks until tender then mix with the mashed potato
  • Hard boil the eggs, shell and slice them in half along their length
  • Place the potato and leek mix in an ovenproof dish and press the eggs lightly into the potatoes
  • Make a cheese sauce by melting a tablespoon of butter in a pan then stir in 2 tablespoons of flour. Add 1 cup of milk very slowly and continue stirring, ensuring no lumps form, until the sauce thickens. Stir in seasonings then add the grated cheese and stir until the cheese melts into the sauce.
  • Pour the cheese sauce over the top of the dish and bake at 375F until the sauce turns golden
